When the modified tongue like petal inside these flowers is triggered, normally by an insect it snaps back to trap the insect. But it can be triggered by anything touching the flower such as us touching them or bumping them, bumping them with a blade of grass etc. They will reset after some time but it is important to try and not trip the labellum or to know when this has happened as the difference between some of these species relates to position and appearance of the labellum when it is set. Mostly if they have been tripped the labellum will be back against the back of the flower but in species that have a long curved labellum it can be difficult to know in some photos. I hope this helps.
