Id also say Euastacus and given the location its likely to be Euastacus rieki and a pretty large one by the look of it.

if there are carapaces from dead ones around the internal feature which can identify to species is three toothed white and triangular milling structures in their digestive tract. Not the white circular gastroliths though, they store calcium for when they shed.
