At least 7, maybe up to 12 flying about, and foraging around the feet of the horses. Surprised to see a couple doing some bare-back horse-riding ;)
The grass was very high, difficult to see the horses a lot of the time, so when the Egret were on the ground they were impossible to see - could only see them when flying or on the horses back.
