It must be a hybrid of unknown parentage, a garden escape. I have checked pretty widely, and virgatum always has yellow flowers, while blattaria has yellow or white flowers, often reddish on the back. Here is a list of cultivars. http://www.daytonnursery.com/encyclopedia/perennials/verbascum.htm

Some of the flowers do not look fresh and it could be the age that is giving the colour.

Afraid not. Apart from the hundreds I have seen in NSW and ACT, there are no photos or descriptions from reputable sources I could find on the internet that mention the flowers of Verbascum virgatum turning pink with age. Here is an excellent illustrated description from where it grows naturally. http://wildflowerfinder.org.uk/Flowers/M/Mullein(Twiggy)/Mullein(Twiggy).htm
