@Mike If you look at the centre of the main flower, the flower that is about to emerge looks yellow. However, I can go back in a few days to check once the flowers emerge.

@AlisonMilton My recent sighting of Scotch thistle shows a slight yellow tinge in the bud but another sighting by Zoed Onopordum acanthium (Scotch Thistle) shows clearly that this does not indicate the flower colour. Carthamus lanatus has a small flowerhead with several spiny bracts (similar to leaves), while Onopordum acanthium has a more spherical flowerhead with a lot of spines with many curving back. Leaf colour and robust appearance also indicate Onopordum acanthium.
