User's notes

On one plant all of the flower heads were missing the orange and black thing in the middle. Not sure if this is just a developing plant or whether it formed unusually.

The labellum is sensitive to vibrations and will flick up to force the pollinator against the pollinia as it tries to leave. You can see it in the first image. It's likely the labellum was triggered by a gust of wind or when you touched it. They are surprisingly sensitive.

Wow, that's interesting. Is this a common thing among orchid species?

I believe it's a trait shared by all greenhoods. Off the top of my head I can't think of any other orchid species with a mechanism that responds to stimulus like that, but hammer the labellum of hammer orchids rocks back and forth as male flower wasps attempt to fly away and mate with the labellum (mistaken for the female). There are a couple of videos on YouTube showing the hammer orchid in action if you are curious about them.
