Unfortunately camera focused on the hand behind the flower head rather than the flowers, which are not in good enough focus for me to see the details needed to key out this plant. I do not think it is Plantago hispida.
For our Canberra book, Don used black velvet behind a lot of the photos where he wanted a plain background. A black T-shirt does a pretty good job too.
